How to Make Coconut Rice in a Rice Cooker

Ingredients
  

  • 4 cups of parboiled Jasmine rice
  • 2 cans of coconut milk (approximately 4 cups)
  • Water (as needed to adjust the liquid ratio)
  • 1 tbsp of sugar
  • Salt to taste
  • Black pepper for garnishing

Instructions
 

  • First, rinse the Rice. Put the rice in a bowl or the rice cooker pot, and wash it under cold water until the water runs clear.
  • If you rinse the rice in a separate bowl, put it back in the rice cooker.
  • Then, pour two cans of coconut milk over the rice for a rich, creamy flavour and moist texture.
  • Adjust Liquid Ratio. Since the usual rice cooking ratio is 1:2, add water to the cooker.
  • The total liquid (coconut milk plus water) should be about twice the volume of the rice.
  • Add a tablespoon of sugar and some salt to taste.
  • Close the rice cooker lid and set it to cook using the standard mode.
  • After the cooker indicates it's done, let it sit for a few minutes.
  • Open the lid and gently fluff the rice with a fork or paddle.
  • Finally, serve the hot coconut rice with a sprinkle of black pepper.
